The screw is 8/32 by 3/8

If the sheared off one sticks out a bit, maybe cut a slot in it with a dremel or something and unscrew it.

Whole assembly should be okay. I suspect it sheared off because it was loose and the troll head out of place aggravated it by hitting the playfield.

I circled in red the bolt to remove to slide the assembly off the plunger.

Looking at your picture, one of the two screws that hold the troll face/switch stack is missing.

See the hex head thing holding the black collar of the troll carriage to the shiny metal plunger ? Unplug the troll switch wire, remove that nut/bolt. Then wiggle the whole troll carriage assembly up and out, lean a little left so the metal tab sticking out clears the whole in the playfield.

Then you can work on the troll carriage assembly and get that switch stack screwed back down tight. If that and the troll face are moving around is the likely problem here.

Things always change.

MM from 20 years ago has many parts on boards obsolete. AV board for example.

Your playfield is the same wood and parts and assemblies as the original. The lighting and boards that run it are redesigned. Very similar to what Stern is doing and Williams would be too if they were still in business.

My experience in tech support suggests that there aren't that many people out there who repair boards, for others or themselves. But they do seem to keep a lot of the early to later solid state games going.

So I wouldn't worry about future repairs. People like Rob Anthony, Chris Hibler, John Wart Jr., Clive, etc. will adapt to the new boards as more games go out.

Of course you could buy EM's. Outside of the plastic score reels, you can pretty much fix everything in them with a spot welder.

No idea the what or why, but I would suspect the timer.

Maybe a voltage drop with both games going on at the same time ?

I would imagine it would void the warranty.

Williams shoots a fast jolt of 20 volts to flashers, MMR is 12 volt, so no idea if it would even work.

The stuck gate closed I wouldn't worry about. A ball goes by, misses the switch, and game things the ball didn't go by the open gate. Play a few games and it will usually clear the error.
 
There are two switches on the linkage below the playfield for the castle gate. Follow the wires from them to the board, check for broken wire or loose connector killing both switches. If you run the drawbridge test, they both should register.

Right jet bumper - please check in Tests - Switches, the leaf blade switch might need cleaning or adjusting. Then check it's wiring.
